You don’t need a lab to go further. Here are some additional methods you can try in your kitchen:
The spoon test . Insert a spoon into the jar and remove it. High-quality honey will form a continuous, thick stream, like a golden ribbon. If it drips quickly and erratically, it’s a red flag.
The water glass test . Place a spoonful of honey in a glass of cold water. Thick honey will sink to the bottom and remain in a clump before slowly dissolving. Very dilute honey, on the other hand, will disperse quickly in the water, almost like syrup.
Crystallization is a good sign! It’s often mistakenly believed that crystallized honey is of poor quality. Quite the opposite. Real, natural honey crystallizes over time due to its glucose content. If your jar of honey has become grainy at the back of the pantry, it’s actually good news.
